Add Flavor to your Plain Potatoes this Fall

No fall feast would be complete without the accompaniment of potatoes. They have long since been a favorite item seen at dinner tables around the world, and have become an essential part of celebrating America's first feast between the pilgrims and Indians. The great thing about potatoes is they can be prepared in a variety of ways, making them a great side dish for just about any dinner.

This fall DoItYourself.com wants to help you create fun, unforgettable potato recipes that will help you add flavor to your dinner table. Here are a few great potato recipes that have been shared among members in the community forums:

Scalloped Potatoes

Ingredients:
 

  • 2 T butter
  • 2 T flour
  • 1 cup milk
  • ¼ cup shredded cheddar cheese
  • ½ tsp. Salt
  • ¼ tsp. Worcestershire sauce
  • 1/8 tsp. Pepper
  • 2 medium potatoes, peeled and thinly sliced
  • Directions:

    In a small saucepan, melt butter over medium heat. Stir in flour until smooth. Gradually add milk. Bring to a boil; cook and stir for two minutes or until thickened.

    Reduce heat and add the cheese, salt, Worcestershire, and pepper. Cook and stir until cheese is melted.

    Place potatoes in a small greased 1-qt. baking dish. Top with cheese sauce. Cover and bake at 350° for 25 minutes. Uncover; bake 20 minutes longer or until potatoes are tender. Sprinkle with paprika if desired. Yield: 2 servings.



    Potatoes O'Brien

    Ingredients:

  • 5 or 6 medium potatoes
  • 1 1/2 c. milk
  • 2 tbsp. butter
  • 1 c. diced cheese
  • 1 sm. onion, finely diced
  • 1/2 med. green pepper, diced
  • 1 small jar pimento, diced
  • 1/2 tsp. salt
  • Cracker crumbs
  • Directions:

    Cook potatoes in jackets and peel and slice. Combine milk and butter and cook until slightly thickened. Add all other ingredients except potatoes and crumbs. Pour sauce over cooked potatoes and dump into baking dish. Cover with cracker crumbs. Bake 375 for 40 minutes for 4-6 servings. (Note: I can not eat green peppers or pimentos, so I substitute lots of fresh parsley to add color and garnish.) And, since I love fresh ground black pepper, I always liberally sprinkle dishes with it. Always adjust recipes to your personal tastes.



    Cream Cheese Potatoes

    Ingredients:

     

  • 8 baking potatoes, peeled and quartered
  • 1 (8 ounce) package cream cheese, softened
  • 1 (1 ounce) package dry Ranch-style dressing mix
  • 1 (8 ounce) container sour cream
  • 1/2 cup butter, softened

     

    Directions:

    Bring a large pot of salted water to a boil. Add potatoes and cook until tender, about 25 minutes. Drain and mash.

    In a large bowl beat the cream cheese and dressing mix until smooth. Stir in mashed potatoes, sour cream and butter; beat until desired consistency is reached.



    Creamy Cheesy Mashed Potatoes

    Estimated Times
    Preparation time: 5 mins
    Cooking time: 20 mins

    Ingredients

     

  • 2 pounds potatoes (about 6 medium), peeled, cut into 1-inch chunks
  • 3/4 cup Evaporated Milk
  • 1/4 cup butter or margarine (1/2 stick)
  • 1 cup (4-oz) shredded cheddar cheese
  • 1/8 teaspoon salt, or to taste
  • 1/8 teaspoon ground black pepper, or to taste

     

    Directions

    PLACEpotatoes in large saucepan. Cover with water; bring to a boil. Cook over medium-high heat for 15 to 20 minutes or until tender; drain.

    RETURN potatoes to saucepan; add evaporated milk and butter. Beat with hand-held mixer until smooth. Stir in cheese. Season with salt and pepper.

    NOTE:Chopped green onions, chopped parsley or cooked, crumbled bacon may be added to mashed potatoes. Serving Size: 6



    Candied Yams or Sweet Potatoes

    Ingredients:

     

  • 6 medium-size (about 2 pounds OR 2 15-ounce cans drained or not) yams or sweet potatoes With the canned of course, you can skip past the "fresh" prep.
  • 1/3 cup butter or margarine
  • 1/3 cup firmly packed brown sugar
  • 1/4 tsp salt
  • maybe even a tiny bit of honey!

     

    Directions:

    Fresh Prep:

    Wash and scrub with a vegetable brush the yams.

    Cook covered in boiling salted water to cover - cooking 30 to 35 min., or until tender when pierced with a fork. Drain potatoes and peel; set aside.

    Cooking Directions:

    Melt butter in skillet over medium heat. Blend in brown sugar and salt. Bring mixture to boiling.

    Add potatoes. cook over medium heat, turning potatoes several times, about 20 min., or until potatoes are well glazed and thoroughly heated.

    Makes 4 to 6 servings


    Cheesey Dutch Oven Potatoes

    Ingredients:

     

  • Olive oil (1/3-3/4 cup)
  • 1 medium onion, chopped
  • 10 pounds potatoes (approximately)
  • 1-2 teaspoons season salt
  • 1-2 teaspoons garlic salt or powder
  • 1-2 teaspoons onion salt or powder
  • black pepper to taste
  • 1-1 1/2 pounds grated cheese mix
  • sprinkle a smidge of Parmesan (grated) for an extra kick of cheese.

     

    Directions:

    Add enough oil to Dutch oven to coat the bottom of the pan.

    Dice onion and add to Dutch oven. Wash and peel potatoes. Slice or dice enough potatoes to fill Dutch oven. Layer potatoes in pan with seasonings. Stir.

    Cover and cook over medium hot coals, OR Bake in a 350 F oven for 30-40 minutes, stirring occasionally. Potatoes are done when they begin to brown on the edges of the pan and are tender.

    Remove from heat, uncover and sprinkle with grated cheese. Allow cheese to melt, then serve and enjoy.
